Blend: 70% meunier, 15% pinot noir and 15% chardonnay
Work in the vineyard: Chablis cut on chardonnays and Pinots Noir, and Guyot pruning for suckers. - Control of yields through extensive spring work during disbudding and trellising. Manual harvest with sorting of the grapes on the vine.
Vinification: Pressing of our grapes at the property in a 4000 kg membrane press (accredited by the CIVC) rigorous management of the quality of our musts. - Vinification in temperature-controlled vats, cold passage, malolactic fermentation carried out.
